Discovering between the two of them the existence of a world of possibilities, made up of mergers, reinventions, legitimate offspring and supposed bastards.
If we want to go back to the origin of the taco, we will look far, far away, in pre-Columbian Mexico several millennia ago. Tortilla comes from corn, the sacred grain that shaped the first humans – a staple along with tomatoes, beans and potatoes: a mixture of flour and water, kneaded and rolled into thin disks and cooked, even fried. Only a few provinces in the north of the country use wheat for their recipes.
