The miraculous fate of the Mexican taco

If we want to go back to the origin of the taco, we will look far, far away, in pre-Columbian Mexico several millennia ago. Tortilla comes from corn, the sacred grain that shaped the first humans – a staple along with tomatoes, beans and potatoes: a mixture of flour and water, kneaded and rolled into thin disks and cooked, even fried. Only a few provinces in the north of the country use wheat for their recipes.
